Dr. John Antun, of Knoxville, died July 11, 2011. He was an associate professor at the University of Tennessee, Department of Retail, Hospitality and Tourism Management. He was the founding director of the Culinary Institutes at the University of Tennessee and the University of South Carolina. Dr. Antun was recognized by his peers and fellow professors in the International Council of Restaurant and Institutional Educators with the highest chef-educator award in the world – the Chef Herman Breithaupt Award. He co-authored and contributed to four leading food service and culinary education textbooks, completed 24 academic journal articles, and numerous international conference proceedings and presentations. He was the founding Co-Editor of The International Journal of Culinary Science and Technology.
